Private Joseph Field killed the Corp's of Discovery's first buffalo on August 23, 1804, in what is now South Dakota. Buffalo provided the ingredients for one of Meriwether Lewis' favorite dishes, boudin blanc, the captain also appreciated the taste of the buffalo hump. On April 29, 1805, near present-day eastern Montana, Lewis wrote, "Game is still very abundant; we can scarcely cast out eyes in any direction without perceiving deer, elk, buffalo or antelope."
