Yeast itself causes fermentation, when added to a suitable mix, such as oats (beer), fruit (wines) or a flour mix (dough). This requires the addition of some moisture, warmth and perhaps a bit of sugar.
What happens is that yeast will grow (multiply) and this process releases various gasses and chemicals. This is what causes fruit to become alcoholic, and causes dough to rise so you can bake bread.
yeast and sugar.
Alcoholic Fermentation.
Yeast turns sugar into alcohol and carbon dioxide to produce energy (anaerobic respiration), it occurs just about wherever there is yeast and sugar.
yeast provides the enzyme zymase which catalyses the fermentation process.
Yeast fermentation is a digestive process that it used to perform growth and reproduction. Fermentation is a form of metabolism by yeast.

Conditions of brewery must be sanitary. Bugs and/or bacteria can ruin the batch. The tempurature is important. Cold air is best for fermentation. if you have sanitary conditions, the right tempurature, yeast and sugar wort fermentation should happen.
Yeast
Yeast is a fungus. It forms carbon dioxide and alcohol during fermentation.
Carbon Dioxide (C2O) and Alcohol are produced by yeast during fermentation.
the sugar has power over fermentation. fermentation can not continue without sugar or yeast
