The oil sending unit is located behind the driver side head right above the clutch cover or bell housing. It also serves as a oil pressure sensor.

The diagram of the thermostat location can be found in the 2000 ford ranger service manual. The manual might be available at the library, and can be bought through the local auto parts store.

The oil pressure sending unit is located on the oil filter bracket about 9 inches above the filter.
On my V-6 4.0 I found it towards the front, way down low on the drivers side. I took off the front wheel and changed it out under the fender well.
