If it's the 3.1L motor, it's just below and to the right of the Power Steering pump. If it's a 2.4L QUAD4, it's on the backside of motor just underneath the exhaust manifold, very dumb location.

I would say that you are losing coolant somewhere hoses,water pump,radiator.
I had the same problem with my 90 buick century, Replacing the temperature sensor did the trick, it is located above and behind the water pump.
The thermostat on 4 cylinder, 2.3L Buick Skylark is on the bottom of the water pump. Remove the metal water line connected to the bottom of the water pump to find it. Remember the new O-ring with the new thermostat.
