according to my Haynes repair manual, the temperature sending unit is located on the intake manifold by the thermostat housing. It is on the left when viewed from the front of the vehicle, the larger sending unit on the right is for the EEC-IV system.
The engine coolant capacity with A/C is ( 8.6 quarts / 8.1 liters ) without A/C ( 7.8 quarts / 7.4 liters ) according to my 1995 Ford Explorer owners manual

The 1997 Ford Explorer ambient temperature sensor can be found on the bottom of the drivers side mirror. The engine coolant temperature sensor can be found on the front of the engine.
that is probably an oil pressure switch that you see. coolant temp sensor is usually near the thermostat in the manifold.

I have a 1995 Ford Explorer XLT - 4.0 L - OHV engine and I don't believe it has a MAP sensor , it has a mass airflow sensor inside the plastic housing between the air filter and the rubber air intake tube
