As of September 2012 Disney World announced that beer and wine will be served in The Magic Kingdom.
Disney.com provides the following answer: "Kosher dietary needs can be accommodated at most table-service restaurants. Request this service 24 hours in advance at (407) WDW-DINE. In addition, kosher food products are available at select merchandise locations throughout Walt Disney World Resorts." You can also find kosher meals (usually without having to order in advance) at these counter service restaurants: Cosmic Ray's Starlight Cafe (Magic Kingdom) ABC Commissary (Studios) Food courts at All Star Movies, Music and Sports Riverside Mill Food Court (Port Orleans Riverside Resort)
Disney World food at counter-service is typical mass produced fast food fare, which varies little in quality and tends to taste bland. Producing food to the scale required causes a hit in quality. Disney counter service restaurants have food that is expertly prepared and considered to be the best food you can get in a theme park, by leaps and bounds. Unless the food includes ingredients or cooking styles you don't care for, this is some of the best food you'll eat all year. It is also possible for food to just turn out bad when you cook it, which unfortunately can happen anywhere, even at Disney World.

I don't really remember but I know Tony's was a good place to go. It's an Italian restaurant in Main Street USA. If you want full-service resturants I recommend Downtown Disney's Wolfgang Puk.

Yes. Spring break (mid-March through early April, especially the days surrounding Easter) is the one of busiest times at Walt Disney World. The parks often fill to capacity by the early afternoon, turning away guests who arrive later. This leads to much longer lines at attractions and counter-service restaurants, and reservations for full-service restaurants need to be booked far in advance.
