Unfortunately, it's not as easy as just saying .gif or .jpg. Different file formats are good for different things because they compress the images differently.

In general, a .gif file is good if your image has large areas of solid color (and by solid color, I don't mean a field of green grass).

A .jpg image is generally good for photographs or images with a lot of gradients.

If you image has transparency, you will need to use either .gif or .png depending on the type of transparency. A .gif image allows pixels to be either completely solid or completely transparent. A .png allows pixels to be partially transparent, but isn't supported by IE 6 without hacks.
