The following vegetables are low in carbs. Sprouts, alfalfa and other small seeds, greens Ã? lettuce, spinach, chard, hearty greens - collards, mustard greens, kale and radicchio. Herbs are very low in carbs as well.

All vegetables have carbs, or carbohydrates. They are essentially made up of various kinds of carbohydrates (starches, fiber, and sugars are ALL carbohydrates), with little protein and fat. However, most vegetables are low in BAD carbohydrates; these include the simple sugars fructose, maltose, and sucrose. Fructose is fruit sugar. Maltose is grain sugar, and found in beer. Sucrose is table sugar. Not all carbohydrates are bad, just the ones that your body uses quickly. For a low-carb diet, choose green, red, orange, purple, and other colored vegetables. Avoid starchy vegetables like potatoes.

Considering that fiber is a carbohydrate and our bodies convert fats and proteins into carbohydrates before they are used for energy, we absolutely need carbohydrates to survive. The focus, however, should be on cutting simple sugars out of the diet and eating more complex carbs.

Lemons, limes, raspberries, cranberries, blackberries. Keep in mind that fresh fruit has NATURAL sugar in it (dried fruit has more, and often added sugar besides, and so too some canned fruits).

Fruit also has nutritional value such as fiber, vitamins, minerals, etc. Let's say that there's a candy bar with 15g of sugar and a banana with the same amount, you'd be better of eating the banana since bananas are packed with potassium and are a good source of fiber, while the candy bar is just empty when it comes to nutritional value.

For weight loss, berries (strawberries, blueberries, etc) would be a better choice, however, as they have less carbohydrate. When eaten, all carbohydrate turns into sugar.
