There is no patron saint of protection but there are numerous saints that protect against various hazards such as snakebite, lightening, etc. Try praying to your guardian angel. Protection is his job.

There are various patron saints for all sorts of particular protections, often hazardous work. The patron for soldiers and police is St Michael the Archangel. The patron for firefighters is St Florian, Sailors is St Brendan or St Nicholas. The patron saint of thieves and for those condemned to capital punishment is St Dismas (the good thief at the crucifixion)

There is no official patron saint for Defender of the Faith as all saints did that. The title 'Defender of the Faith' was conferred on King Henry VIII by Pope Leo X for his defense of the Church in response to Martin Luther. Of course, we all know what happened soon after. When the Pope refused to support Henry's petition for a divorce he split with the Catholic Church and founded his own church with him as the leader.
