I know this will not be received well by some but in the interest of honesty, "The Hill" as it is named above is really known as Dago Hill in St. Louis and that is because it was the location where most of the Italian immigrants aggregated to live.
Provel was invented by Costa Grocery (now Roma Grocery) In St. Louis MO in a predominantly Italian neighborhood named "The Hill" they worked with Hoffman Dairy Company of Wisconsin to make it happen. Hoffman is a subsidiary of Kraft Foods. Provel was designed for Pizza and is the cheese used on Imo's Pizza.
