Provel Cheese is manufactured by Hoffman, now owned by Kraft. I is a processed cheese including the ingredients of swiss, cheddar and provolone cheeses. Made to melt and break off as opposed to being stringy.
The only place you can buy it (that I have found) is online from Imo's website. The down side is the shipping price. It will run about $48 for 2 day delivery. That being said I found a couple of recipes that make a decent clone.
Recipe 1: 16 oz of shredded white American, 4 oz of Monterey Jack, and 6 drops of liquid smoke. mix and enjoy.
Recipe 2: mix together 2 cups of shredded provolone, 1 cup of shredded Swiss, 1 cup of shredded white Cheddar, and 2 or 3 drops of liquid smoke.
