You only need maple syrup to make maple butter and maybe 1/4 teaspoon of butter or vegetable oil to help prevent the foaming. Boil up your maple syrup to 235- 236 degrees and remove the pan as soon as you hit the spot. Cold down the pan in cold water, let it still until all the heat is removed. Stir the maple syrup with a wooden spoon ( or an electric mixer ) for quite a while, it can take between 15 to 30 minutes until the maple syrup loose its glossy look. 2 cup of maple syrup makes 1 cup of maple cream.
