I can only answer for the French Air Force where the famous Antoine de St Exupery (writer of "The Little Prince") was 44 when he was shot down flying his unarmed P38 over the Mediterranean Sea in 1944.
It was likely Lt. Jakob Wolff, of the German Luftstreitkräfte. He was 46 in 1914. He had 4 victories and was a decorated pilot. His flying career ended 27 July 1917 when he was wounded.

A life as a pilot was very hard as the life expectancy for a new pilot was just eleven days! Also they were not issued with parachutes because the Generals thought they would escape too quickly! A lot of them died from this. They also had a gone to kill themselves if their plane caught on fire!

I've checked and rechecked my books on WW1 pilots and can find no Central power pilot who shot down 1 Japanese plane, let alone 40. Evidently during WW1 the Germans had only 1 airplane posted in Asia, so no pilot shot down 40 Japanese during the war.
