The correct term is "true-breeding". What that means is that if he takes his two pea plants with white flowers and breeds them together, he will always get a pea plant with white flowers. Pea plants are self-fertile so it is easy to obtain parent plants that "bred true." That is when allowed to self-fertilize, the offspring always had the same appearance as the parent plant. By starting with pure strains for each trait such as tall or dwarf, the offspring would indicate which trait is dominant. If a tall plant is crossed with a dwarf plant, all the offspring are tall. Therefore the gene for tall is dominant to the trait for dwarf but the tall offspring are also carrying a gene for dwarfism.

It was easiest since he was a monk. It didn't cost much and added to the table. He was very lucky since the plants he used had such simple traits.

The characters were fixed (stablized) in purebred plants hence it was easy to study their inheritance pattern.
