I think it was because they had an interest in the legends, myths and tales that they published. --- They were keen to preserve Germany's heritage of oral folk-stories, just as others had preserved folk-songs.

The Grimm Brothers collected stories to preserve and document German folklore and culture. Their collection, called "Grimm's Fairy Tales," aimed to capture the oral traditions and tales passed down through generations. As for "Grimm law," it typically refers to legal principles developed by the Brothers Grimm to establish a unified legal system in Germany, particularly in the 19th century. These principles focused on codifying laws across different regions and were influential in shaping German legal structure.

The brothers were initially looking to research and find old unchanged words from a long time ago. Jacob Grimm travelled the German countryside speaking to rural folk to try to get them to talk freely and hopefully pick up on the flow and use of words. However as he was an urbanite, they would of had a natural distrust for his questions, possibly worried that he was there to either make fun of them and their rural old time ways. Whatever the distrust he met a wall of silence.

As such to encourage people to speak freely and hopefully get them to use their language as they would 'naturally' (i.e. without someone observing) he asked them to tell him stories, these he recorded faithfully to gain their trust. As such with his travels, he ended up with a treasure trove of stories, which was published by the two brothers. He was also able to research the words and therefore come up with the linguistic "Grimm's Law", which was his initial goal, to study language. The stories a wonderful by-product.
