There was a drought and famine in Jacob's time, so the Israelites went to Egypt because "there was grain in Egypt". Joseph, Jacob's lost son, as vizier in Egypt, has wisely built storehouses for Egypt's grain during the years of plenty to give out in the years of famine.

Jacob's other sons came and requested some of the grain that Joseph had saved. When Joseph reunited with his brothers, he eventually had the rest of the family brought down to Egypt, to protect them from the famine. They stayed in the Land of Goshen as guests of the Pharaoh.

Later on, in Moses' time, the Israelites had to leave Egypt and go to Canaan in order to escape their enslavement.

When did the israelites leave canaan and settle in Egypt?

It was because of famine (Genesis ch.46). It was part of God's plan, since Egypt would be the "iron furnace" (Deuteronomy 4:20) in which the Israelites would be smelted, removing the dross, and would grow into a nation ready to receive God's Torah.

Did all the Hebrews who left Egypt go to Canaan?

According to the Bible, all the Hebrew people who left Egypt died in the wilderness, apart from Joshua and Caleb. However, all their decendents are said to have gone to Canaan. However, a near consensus of scholars is reported to believe that there never was an Exodus of Hebrew people from Egypt, as described in the Bible. If the Hebrews did not leave Egypt under Moses, they did not go to Canaan.
