They fought because the Muslims had control of Jerusalem, the most important city to the Holy Roman Empire. To get Jerusalem back under the control of it, the crusaders started the Crusades, or holy wars.

Answer:

The violent Arab conquests of the period 628 to 638 AD saw the Arab (Muslim) armies take over Palestine, Syria and Egypt. They went on to sweep westwards, taking North Africa, most of Spain, Persia and as far east as the borders of India. It was therefore out of violence, war and bloodshed that the Muslim faith came to all the countries where Islam is the modern religion.

Jerusalem was a Holy city to Christians, Muslims and Jews and for many hundreds of years after 638 AD all three religions lived together very peacefully in that area. Only when the Seljuk Turks became the dominant force for Islam did the toleration of Christians in the Holy Land end. The local Christian populations were abused, harassed and threatened, forcing them to ask for assistance from the Byzantines and the kings of Europe - the result was a long series of crusades intended to capture and retain Jerusalem for the Christians.

For Christians and Saracens alike, Jerusalem was the ultimate prize.
