The land that Texas currently occupies used to be a part of Mexico. Many people were moving to Mexico to build plantations. The Mexican government did not like the large amount of people that were immigrating to their country. In an attempt to stop this, they emancipated the slaves (the main source of labor on the plantations). Instead of leaving, the plantation owners decided to declare their independence.

Seeing the economic and military support English-speaking Texians had to break away from Mexico, Spanish-speaking Tejanos followed the proverb: "if you can't defeat them, join them".

Many of them however, were discriminated against by their former "friends" and eventually fled to Mexico.

In short, Texans didn't want to be Mexicans. They broke all their laws and rejected their culture even though they were legally under control of Mexico. They refused to emancipate slaves and stop importing them, they refused to convert to Roman Catholicism, and did a lot of smuggling. Texans were also, for the most part, white Americans who immigrated there for money and opportunity. So there was tension between them and the native Mexicans. All of these factors created enough tension for Texans to finally openly defy Mexican rule rather than silently avoid laws or accept them begrudgingly.
