Because in Buddhism, one of the core teachings is that attachment is a root cause of suffering. Buddhism is, at its essence, a set of techniques that aim to critically examine the ways in which we are "attached" to things, people, feelings, etc. in order to decrease and diminish our personal suffering. Because people are often attached to "things", either sentimentally or because they steal our attention/energy in their constant need for upkeep/organization, reducing the number of material goods helps to clear the mind and free it of attachments. This allows our default joy and happiness to eventually shine through.
