According to Torah, Jews are not supposed to shave the five corners of the face. Some Orthodox Jews interpret this to mean that their sideburns should never be cut and this leads to peyot, which are sideburn curls.

What are the hair-braids in Jewish rabbis' hair?

The Jewish sidelocks are called Peyot. They are grown by some (not all) Orthodox Jews, in a voluntarily strict interpretation of the command to not shave off our sideburns (Leviticus 19:27). Among those who do grow them long, some curl the sidelocks (these are the "braids" you mentioned), and some don't. Typically, many Hassidim (one branch of Orthodox Jews) have the custom of curling the sideburns, while the Yeshiva community grows them to about 3-4 inches and puts them behind the ears.It is not something particularly reserved for Rabbis, but in a particular community all or most of the men will have peyot.

What were the curls Jewish men used to have called?

Assuming you mean the curls that hang down in front of the ears, they're called peyot (Hebrew for corners, edges or sides) and are a result of the Torah rules governing shaving and particularly the rule on not shaving the "corners" of the head. They are still very common amongst some Jewish groups, most notably the Yemenite Jews who call them simanim and the Chasidic Jews. Various groups adopt various styles, such as those of the Chabad-Lubavitch organisation who have peyot which begin at the temple of the head and hang down as far as the bottom of the ear, or the Belz who wrap them around their ears.
