When the Jews were fleeing from slavery in Egypt, they needed to eat, but didn't have time to wait for the bread to rise so they ate it flat. Matzo reminds Jews of that time in history. (along time ago)

Jews do not have bread over Passover for many reasons:

  • They are becoming closer to G-d.
  • When Moses took the Jews out of Egypt, they did not have bread. They had a unleavened that we call today Matzoh (the bread they had wasn't crunchy, it was more like pita).
  • To feel more in the spirit. Jews want to feel how B'nai Yisrael felt while leaving Egypt.

There is no scientific reason to why they do so. It is just that G-d told them to do so, and so they follow Him. But later, it has been proven that the kosher diet is a very healthy one, and some people who are not Jewish try to get kosher products
