It was round because that's the shape it would go into when rolled out.
Uh... lests see...nothing! I myself am a Jew and the only diet the Jewish culture gives me is pesach where you cant eat any bread or gluten...yeah...Jews just mosty overeat for fun....
The slaves in Egypt did not have enough time to make leavened bread. As a result, Jews eat unleavened bread (called Matzah or מצה) during Passover. The rest of the year, Jews eat leavened bread like everyone else.
