Jewish boys and girls have been learning Hebrew for millenia, because it is the language of the Torah, halakha (works of Jewish law) and commentaries. Even the Talmud, which is in a mixture of Aramaic and Hebrew, cannot be understood without a thorough knowledge of Hebrew. No matter what country they lived in, the great majority of authors of Torah-works wrote in Hebrew.
