If a member of the Church of Jesus Christ of Latter-day Saints (commonly called the "Mormon" church) is getting married in the temple, there are some strict guidelines as to what is acceptable for a wedding dress. The utmost modestly is required of men and women in the temple. A woman's dress (no matter what she is doing in the temple) must be floor length, have long sleeves, be completely white with no color ornamentation, have no sheer fabrics that are not lined, and must be simple and void of excessive ornamentation.
Many brides getting married in the temple choose to have a long sleeve dress for the temple ceremony and another short sleeve dress for photos and the reception. Most temples also provide long sleeve white jackets to be worn over wedding dresses that do not have long sleeves.
If a member of the Church chooses not to get married in the temple, but gets married in a church meetinghouse, outdoors, or some other location, they can wear whatever dress they want. Most choose to wear a short sleeved dress in keeping with the modestly guidelines of the Church.

If the wedding is going to be indoors, it shouldn't matter if the dresses are winter appropriate as long as the weather inside the building is warm. I personally don't like long sleeved bridesmaid dresses, so I would go with short sleeve dresses or classic sleeveless tank dresses.
