As their strength wanes, and their muscles weaken, gravity pulls them down. But, it was not always so. Before humans started using chemicals as insecticides, cockroaches who were reaching the end of their lives would strip naked and run on their hind legs taunting birds ... ie: "You can't catch me, nyah, nyah, nyahhhh..." this was known as "Suicide by Bird", somewhat akin to today's "Suicide by Cop". Anyway, when birds started getting sick and their egg's shells were not developing well, the birds swore off eating these cockroach streakers. As more and more elderly roaches died of heartattacks from the stress of hopelessly running naked and not getting eaten, they basically just decided that dying of old age in one's sleep was preferable to dying of heart attacks from unproductive running. So, now they just lie down to die. There, you have it.

There does not seem to be any reason to expect cockroaches to die out; they are a very successful species, however, if they were unexpectedly to die out, their ecological niche would be quickly filled by other scavenging insects, of which there are many.
