They have some carbohydrates. They are high-calorie because they have a lot of oil.
It depends on the type of seed. Some seeds are more delicate then others. There are actually some types of seeds that require being damaged before they will germinate. Some require passing through the digestive system of certain animals, many prairie type plant seeds need to be burned first. There is a type of canna lily I have here at home that need to be scarified before they will germinate. I have to sit there with a nail file and file a section of the outer shell off before putting them in the ground. After that, they sprout in just a day or two. I have also started avocado trees from seed by shoving four tooth picks deep into the seed and putting the bottom half in a glass of water for a few weeks. They are a few feet high now. For the best results, you just have to read up on what you have.
Always plant 2-3 seeds per cell. Sometimes one of the seeds will not germinate, this way you still have at least one coming up. After they have grown a couple of weeks, pick the best one and snipe any others in the cell. Now you have one good growing plant.

Not many vegetables grow well in the autumn. If the weather holds ( no frost ) you might be able to plant radish ( they sprout within a week, and are ready to harvest in about 3 weeks more. Spinach will germinate in about 10 days, and prefer ( like radish ) cooler weather. Red lettuce varieties sprout quicker than romaine lettuce, and as long as there is no frost, you MIGHT be able to plant those in the autumn. ( I have been successful with all of the above mentioned vegetables in the autumn, and I am in southern Ontario. )
