Cats most usually bite ONLY from fear. They may bite when the cat is ill, injured, or in pain. Otherwise, cats bite, hiss, or snarl when annoyed. Hissing is a warning sign to not touch. However, if you think the cat needs vet care, drop a towel over its whole body and head and quickly grab it to place into a cat carrier. Other people use oven mitts or gardening gloves to pick up a snarling cat who needs help.
