We wash fruits and vegetables under running water to wash away residual dirt, pesticides, germs etc.
It works better to do it under running water than just in a sink or bucket of water because the contaminants are then swept away instead of just diluted. Dirt and other contaminants can at best make the food less pleasant to eat - and at worst can make you sick if ingested with the food.
Keep in mind that the fields where they are grown are not necessarily sanitary. There have been some instances of contamination with Escherichia coli (E. Coli) - bacteria you find in feces - because the workers in the field have nowhere else to go to the bathroom than the fields where they are harvesting the food. Yeah - I think it might be worth washing the food first...
