Because the characters in successful novels progress, they change and adapt to circumstance and experience. Perhaps they start bitter, yet by the time their tale is told, they are at peace with themselves and those around them because of the things that happened on their journey. This progression is what people associate with on an instinctive level and it is this, as much as a good background plot, that people enjoy reading about.
