Put simply, because peoples still wanted to drink! Often people who disagree with a law will happily break it. So they did in the speakeasies. The fact that bootlegging (smuggling booze) was such a large industry meant there was plenty of supply for the demand.
Also they were fun places to be, they had music and dancing so it would make a good night out.
The fact that they were popular meant that even more people would go to them because their friends would. Plus people were in times so boom (as opposed to the bust of the Wall St crash) so they would spend more. Businessmen would open up speakeasies as a good way of making money.
