it may need to be adjusten on the fuel/air or the float s if carburated need to be adjusted
Connect it to a code scanner, see what the computer says.

Check the fuel pump and fuel filter.
on the left side of the intake is a round cylinder with wires plugged into it. this is the idle control. It is most likely dirty. take it off and clean it out with carb and choke cleaner.

it hesitates because its governed and it wont let you go over 100 mph so when your accelerating it starts to hesitate around 70 to 80 mph you cant go over 100 mph
P1000 on any ford means you have cleared the PCM codes and it hasn't run it's self-diagnostic tests yet. This will go away. It is not related to your rough idle.
You idle air control valve is having a problem as well as carbon build up in the engine. Part store chemicals won't event make a dent in the carbon. Go to your Ford dealer. It will cost about $500.
its most likely your idle control sensor. if you replace it the truck should run fine.
Check fuel pressure.
