Because the founders wanted to construct a nation of freedom, based on Locke's principals in the pursuit of life, liberty and property (which they changed to happiness). In making this new nation religiously free, it allowed people to practice their own religions without discrimination. It was an aspect of democratic ideals, but probably also in the fear that religious wars such as those that occurred in the past couple centuries in Europe may erupt in America, such as the 30 Year's War, with bloody violence over the dominance of Catholics and Protestants.
Because the idea was to advocate for the freedom of religion. The establishment of religion would create an official or state religion, with all others patently subordinate to it. A government free of establishment is the only way to protect equally, provided the civil law is not violated, the freedom of each religion, along with the freedom not to practice religion. This was a major insight on the part of the founders, especially when you consider the religious connections of most nations of their day.
Thomas Jefferson was a Deist, but I don't know about the other authors.
