99% of all of thse problems have to do with a bad ground. Clean all the connections, both at the battery or at the car. Alternatively, something is shorting and drawing power when it shouldn't. But, as the axiom goes - it's the ground.
Connect a slave battery to the alternator live terminal and an earth. Then the central locking should work.

All battery is DC battery. DC is meaning Direct Current. Battery voltage is steady, not change, except reduce when battery go flat.
Did you by any chance make a spark removing that battery? If you did or didnt I suggest you check the fuse
