Depends. An older Diesel is likely to keep running. A modern, with a full set of electronic engine diagnostic might not.
It sounds as if it's running because once it's turned on and ran it starts to heat up. Once you turn off the engine it makes the sound of it running because it is still trying to cool down; hense, it's the fan motor that's making that sound, not the actual heater. FYI, I'm a mother of 2 and an attorney. I found this out about the fan thing AFTER it happened to me and I asked a mechanic. He acted like I was an idiot.

Check radiator fluid when engine is still cold but running add if needed and fill resevoir. Never open a radaitor cap on a hot engine only qualified mechanics should ever attempt this.
yes. you are still moving in a direction, and the wheels are still spinning, and the engine is still running, and the transmission is still being used.
The engine coolant fan can keep running after the engine is turned off in any car because the temperature gauge is in the radiator. As long as the radiator is still hot, the fan will keep running until the temperature gauge says it has cooled enough.
