The cat's naturally obstinate nature is the reason for your problem. Try watching the cat and when it is just about to poop in front of the litter box, put it in the litter box. Do this a couple of times and it should work. It worked with my cat, but then again it was a kitten then.
It could be because the litter is too dirty for the cat's liking, or the cat may not like the brand of litter you are using.
Or, it could be even simpler than that: sometimes my cats accidentally kick their turds out of the litter box and onto the floor.

While the covered litter boxes are nice to people, they can be too small for a large-boned cat to use. Second, is the smell of cat urine in the floor next to the litter box? Most cats will return to the same place they went to the bathroom before, so if there's a urine smell to the floor he'll keep peeing in the same spot. Third, is your cat positioning himself wrong in the box? My cat did this - she would scoot her backside right up against the edge of the box then pee over the edge. I swapped to using a clear plastic crate for her litter box and never had the problem again.
If none of these appear to be the issue, I would suggest talking to your vet about the problem - he can perform some simple tests to rule out a medical problem and spend some time talking with you about what is going on.
