I can only take it logically; leaves contain water. Normally, when water is liquid, the hydrogen bonds between the water molecules form and reform. When it freezes, each water molecule bonds with 4 other water molecules and creates a rigid lattice, which holds them together, but further apart than in liquid water.

In a nutshell, water expands when it freezes. So the plants volume will increase suddenly and this can cause the cell walls to bust, causing cell death.
