It's not any more important in Missouri than it is anywhere else.
The ice cream cone got a huge boost in popularity (it's often claimed it was invented there, but the basic notion had been around for the better part of a century, as is documented in old cookbooks) at the 1904 World's Fair (which was held in St. Louis). But that wasn't because ice cream was "so important", except to the guy who was selling it and ran out of bowls. For him, it was probably pretty important.
