Chilling a wine brings out its acidity. White wines tend to have pronounced acidic flavors- think of the grapefruit aromas in a Marlborough Sauvignon Blanc or lemony flavors in an Italian Pinot Grigio. If a wine is served too cold, you may miss out on other flavors, and your wine could taste tart or even metallic. Conversely, a warm white wine will usually be flat and unrefreshing.

Red wines are generally better served at cellar temperature- somewhere around 55 or 60 degrees F. My personal experience is that cold red wine does have interesting flavors, but is also bitter and too tannic.

A good way to find your personal preferences is to put a heavy chill on your whites, then let the bottle come to room temperature as you drink it. You will see a wide array of flavors, and even find whites that improve as they warm. I've also found that it is nice to put a light chill on reds and drink them the same way- you will notice new aromas as the wine changes temperatures.

Wine is something to be savoured and enjoyed properly, so a glass is only ever half-filled. This allows people to sip carefully and mix the wine's components by moving the glass.

An important part of getting maximum flavor from wine is the oxidation that happens the moment you pour the wine. The oxidation brings out the full 'nose' or smell of the wine. Red wines should be decanted - poured into a bottle that is flared at the bottom - to give maximum exposure of the wine to air. Then it should be consumed immediately. Oxidized wine will also spoil quickly.

White wine does not require the same level of treatment, but wine glasses bulge in the middle. At this widest point the maximum surface area is exposed to air, giving the most 'nose'... so 'full' IS really half full. They could have just made the wine glass look like a martini glass with half the volume, but the rest of the wine glass is to hold the aroma where you nose can get to it.

If properly served, yes there should be. White wines should be served in a glass with a longer stem, to prevent the hand from warming the wine. Reds should be served in a glass with a slightly larger bowl to enhance aeration.

There are different glasses to take advantage of the specific properties of the wine. Sparkling wines are served in tall glasses to advantage of the bubbles. Red wines have a broader glass to provide more surface area for the air to access it.

Usually red wine glasses are larger, since this allows the wine to breathe, whereas white wine is in a smaller glass because it should be poured in smaller amounts to stay chilled.
