because saturated fat is not easily broken down by our metabolism which results in retension of fat in our body! in other words saturated fat contain single bond carbon chain,which is a strong bond and found in food items like ghee (clarified butter )and unsaturated fat contain double bond carbon chain,which is a weaker bond and found in food items like olive oil which can be easily broken down as compared to saturated fat.
