Well, they weren't always. However, the general reason is that they were seen as property, and as subhuman. You wouldn't keep your dog in the house unless he was really well trained, and so most slaves (who were seen as dogs or other animals for the most part) were kept outside. Even owners who had affection for their slaves and who treated them well usually only did so within that context... as favored pets. Not as equals.

A very simple reason for the separation was because they caught fire often and to have the kitchen apart saved the rest of the house or castle from burning down. In colonial America they did the same thing for the same reason. In Jefferson's slave quarters the historians kept finding a pattern of nails outside the cabins the slaves lived in. Those were there because when the chimneys caught fire they would run outside and pull down the chimney away from the cabin. It was all ready built so they could do that, so fires happened often.
