Once it has been cultured, it needs refrigeration to slow the bacterial culture growth and maintain quality. Most people eat yogurt because of the probiotic benefit. If it is not refrigerated, the bacteria will die off more quickly and the benefit will be lost.

You don't. If anything, the acidophilus will multiply and you will enjoy a greater serving of pro-biotics. If it stays out too long the yogurt will acidify, similar to leaving milk out so it will taste bad, but it's not infectious.
