I believe that it would mostly be for religious/animal rights reasons. For religious reasons: maybe they believe in reincarnation and if they eat a hamburger, they may be eating their grandfather or something. It sounds strange to someone who doesn't understand it. For animal rights: maybe they think that the killing of animals is cruel and inhumane, no matter what form it is done in, and to eat anything doing with animals would be praising that. There are still many reasons but those are the big ones I would assume.
