Because God forbade it when detailing the laws of kashrut (Deuteronomy ch.14).

If the question is searching for the greater meaning or purpose, there have been a number of such reasons suggested, including (but not limited to): preventing trichonosis, pigs commonly ate trash, delineating the Jewish community, pig-flesh is similar to human-flesh, the pig does not need to be actively raised, unlike most other livestock, the pig has malignant effects on a person's soul, etc. However, Religious Jews do not believe that any of these reasons serve as anything more than science adding to the validity of the original command. They argue that God in His Infinite Wisdom gave the Jewish people the Torah knowing how the various elements of the world would interact and knew that pork would not be good for Jewish people. Therefore, He forbade the consumption of pork and Jews follow such a command because they accept the Divine Wisdom.
