In their earlier years before the emergance of mercenary armies, they were hardy farmers who turned out to defend their land and ccity.

This is shown after the Battle of Marathon when the Athenian army, having fought and won the battle, realised there was about to be an attempt on their city and ran the 26 miles back to defend it, carrying their armour and weapons. The marathon run of today commemorated this feat.

Incidentally their diet was mostly grain and vegetables, with a bit of aninal/fish/poullytry when available and some oxen at feast time.
