Why would a VW golf lose power while driving eventually die because of power loss and eventually have to be restarted on the highway shoulder because I pressed the gas pedal?

Based on your description it sounds like your engine is starving for fuel. Before the car completely dies, does the engine buck?
There are a couple of things to check, starting with the simplest and working your way to the more complex. The first thing you should do is pour about half a litre of methal hydrate into the tank to remove any water in your gasoline.
After that, it would be a good idea to change the fuel filter.
Following that, take a look at your fuel pumps. Depending on the year of your VW, you will probably have 2, an intank pump which pumps fuel into a small tank for use by the main pump. The main pump is located under the car along with the fuel filter. Check to see that the fuel intake screen in your tank is not clogged.
