Why would the oil light come on after having an oil change 2 weeks ago in our 2002 Jeep Liberty Limited?

It has started to happen to me. I use full synth. and my dipstick reads full. I changed it three weeks ago. I have a 2002 Jeep Liberty limited with 180,000 miles. It happens after I have driven for about 10 minutes and pull up to a light. "Bing" and there is the oil symbol. It goes off after I start driving. It is not consistant and will miss a day from time to time. They said that I need to spend $100.00 to check my oil sensor and another $50.00 for the part.
