My family makes sausage and peppers for every family gathering and that tray sat out ALL DAY LONG...think 12+ hours sometimes. The family comes in and out and picks all day. I am 40 years old this year and have witnessed this scenario 100's of times in my life. No one has ever sickened. There are so many items that my Nonna would just leave out sometimes for days that the USDA would say to throw away. The woman lived to be 98 years old. I think most people have come to realize through trial and error that there is "USDA guidlines" and then there is reality. Now seafood is an altogether different matter..I wouldn't leave that out. But your cured meats, butter, eggs , cakes ..things like that I wouldn't stress as much as long as they were inside in a climate controlled kitchen. You'll figure it out as you live life. Good luck! And don't waste those sausages...Heat them up again if you're concerned but 6 hours? I personally would still eat them.

Potentially hazardous food like that should not be left out at room temperature for more than 2 hours - or only one if the ambient temperature is quite warm. At that time, it should be refrigerated or reheated.

It would probably be best not to. Two to four hours at room temperature is pretty much the limit for food safety.
