A bad thermostat can cause an engine to overheat. If you've been adding water, there is a good possibility that the radiator is plugged with minerals and debris. Auto maintenance is more than just changing the oil and rotating the tires. You need to keep the coolant clean and topped off, hoses inspected and replaced when they become marginal and a good radiator cap. There are many other requirements, and if you can't do these things you should either take the vehicle to someone who can help you, or learn how to do it yourself. Owners manuals typically have a list of routine maintenance and intervals for your vehicle. Those recommendations mean something and should be followed.
There wasn't a 2000 LeBaron. On a Lebaron, the thermostat is under the housing where the upper radiator hose attaches to the engine.
It is located under the housing where the upper radiator hose attaches to the engine.

Look at the bottom or rear of the radiator
There are many possible causes of overheating. They include low coolant, inoperative radiator fan, failed water pump, missing belts, restricted radiator, failed head gasket.
Follow the hose from the top of the radiator back towards the engine, where it connects is the thermostat housing, this can be removed by taking out the 2 bolts. - remember to replace the gasket!
It is between the grill and the radiator.
Lower radiator side of the engine.
If the thermostat is stuck open, the engine will never warm up to proper temperature.
If you mean the radiator drain plug.. its at the bottom of the radiator on the left hand side...
