The fuel cap has no effect on the fuel gauge and there is no "reset" for this. More than likely the problem is with fuel sending unit in the tank. A less likely cause is incorrect levels of additives in fuel, this can cause the gauge to flucuate erratically.
The gauge should be showing a minimum 195 with engine warmed up. I would start with replacing the thermostat.

Answerit could be the wiring from the sensor Adding to that. On most GM engines, there are multiple (usually two) Temp Senders. One for the dash, the other for the computer. Its possible that just the one for the PCM (computer) was replaced.
The sensor (or the computer) is shot. Must be replaced to fix it.
The gauge or sensor needs to be replaced.

If the fuel gauge is stuck, the needle never moves, then the gauge has a problem and needs to be replaced.

The floater inside your pump is sticking. You will have to replace your fuel pump in order to fix this problem.
Offcorse your tank doesnot have any holes i can assume ... so ither you have a damage gas lever that's in the tank with the full pump, which is rarly get defected or your full clock gauge need to be replaced , to replace any of these you should have very good knologe about cars maintenance and electronices
there is a sensor inside the gas tank. if you have the GM dealer replace it.. its about $500.00.
