Turn the wheel back and fourth with the cap off and it will "push" the air out of the line. Check the fluid level and make sure it is at C for cold on the dipstick underneath the cap, when the car is idled and just turn the wheel back and fourth fully about 5 times each way.

That depends on the thermostat. If it's a 185 thermostat, the engine should run at 185. If it's running too hot, check the thermostat, radiator and water pump. If it's running too cold, replace the thermostat.
