Basic Pickled Sausage and OnionsThis recipe is good for bologna, polish sausage, smoked sausage or any kind of cooked sausage.You will need:1 quart jarSausage, your choice ofOnions, slicedBrine:1/2 cup sugar3/4 cup white vinegar1 1/4 cup waterMix all ingredients and stir until sugar is dissolved. Brine will be strong, but will tone down when it is absorbed into the sausage and onions.Procedure:Peel off skin if needed.Slice the sausage into 1/4" to 1/2" thick slices.Layer sausage in bottom of jar.Layer sliced onions on top of sausage.Continue layering until jar is filled.Pour brine into jar to completely cover sausage and onion layers.Place lid on jar and refrigerate at least 24 hours before serving.
Cabbage and smoked sausage (Polish sausage, cut into 1" slices or whole Li'l Smokies are good) can be fried in butter or oil, or covered in water and boiled until tender.
It really depends on the brand of sausage, if you are getting a lowfat sausage the likelyhood of the sausage having a smaller amount of calories is very big. However the Italian sausage tends to be one of the most caloric sausages.
